Load up on your nutrients with this quick and easy chickpea veggie bowl. Sheet pan dinners are a fan favourite in my kitchen. This recipe is very versatile and can be made vegan, vegetarian, and/or gluten-free. It also makes a great taco filling.

Chickpea Veggie Bowl/Taco Filling
Ingredients
- 1 can chickpeas, drained, rinsed, and dried with a paper towel
- 2 zucchinis, sliced or quartered *For the veggies, I recommend doing a minimum of two different ones. You can mix and match to your heart's content.
- 1 broccoli head, cut into bite sized pieces
- 1 bell pepper, sliced and diced
- drizzle avocado oil (Use your best judgement. Make sure everything is nicely coated.)
- ½ teaspoon salt
- ½ teaspoon paprika
- 1 teaspoon chili powder
- ⅛ teaspoon turmeric
- ¼-½ teaspoon ginger *optional
Instructions
- Prep all veggies as stated.
- In a small, separate bowl, mix your choice of spices.
- In a large bowl, add the veggies and chickpeas. Stir until well combined.
- Drizzle the veggie mixture with your choice of oil and add the spice mixture. Stir until everything is evenly coated.
- Line a baking sheet (or two) with aluminum foil. Spread the veggie/bean mixture. Make sure it's just a single layer and that nothing is overlapping. They want to snuggle, but they don't want a huge, lumpy group hug.
- Bake at 425℉ for 15-20 minutes. Serve warm and enjoy!

Tips and Tricks for Chickpea Veggie Rice Bowl
As I mentioned before, this recipe is incredibly versatile. Customize it to your liking. Experiment with different vegetables. You can make it vegan, gluten-free, dairy-free, or satisfy your inner carnivore with some meat options. Make it a rice bowl for a nutrient-rich dinner, or use it as a taco filling. This recipe also works really well with couscous.
What Dressing Do I Use?
The beauty of these power bowls is that the possibilities are endless. My go-to dressing is usually tahini with freshly squeezed lemon juice, garlic, black pepper, and salt. If you’re in a pinch, tahini mixed with water works well.
There are so many dressing recipes out there. Try a balsamic vinaigrette, peanut sauce, simple soy sauce, chipotle, or a stir-fry sauce.
Use Two Pans if Needed
Don’t try to cram everything into one pan. If you need to use a second pan, do it. I was impatient and tried to throw everything in one pan. It didn’t cook evenly and I had a giant mess in the end. Don’t be me. Have patience. Make sure your bean and veggie mixture is spread in a thin layer. You can eat the first batch while you wait for the second one to cook so you’re not starving.
Freeze Some for Later
This step is tried, tested, and true. I love making a large batch of any sheet pan recipe and freezing it for later use. It’s a great recipe if you’re looking to get into meal planning, batch cooking, or freezing meals. Your freezer is a magical place. It’s time to show it some love.
Line Your Pan for Easy Clean Up
Line your baking sheet with aluminum foil or parchment paper for a quick clean-up afterward. If you decide to use parchment paper, make sure it can be used at a high temperature. It will say on the box to how much heat it can handle. I didn’t check the one time and ended up with black paper. Oops.
Switch Up the Veggies
As you can tell by previous posts, I’m a huge fan of versatility in cooking. Don’t ever feel obligated to stick to the recipe as is. Not a fan of broccoli? Just axe it. I’m not here to judge you. Add or omit ingredients to your heart’s content. You might even come up with some other interesting flavour combinations.
