Butterscotch Butter Pecan Cake Mix Cookies
Ingredients
- 1 box Butter Pecan Cake Mix
- ⅓ cup avocado oil (or any other neutral tasting oil)
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup butterscotch chips
Instructions
- In a large mixing bowl, add in all of the ingredients. Combine well with a mixer.
- Scoop out some batter using a tablespoon, roll into a ball, and place on a cookie sheet. You can also use a cookie scoop for this step.
- Leave about 1-2 inches space in between each cookie ball.
- Bake at 350°F for 10 minutes, or until the cookies are a golden brown. The amount of time will also depend on the size of the cookies.
- Let the cookies rest for 5 minutes before removing them from the cookie sheet.
Notes
Baking Notes for Butterscotch Butter Pecan Cake Mix Cookies
I find that these bake a bit differently than normal cookie dough. Wait for them to cool a bit before removing them from the cookie sheet. (About 5–10 minutes)
When I baked my first batch, I immediately took them off the cookie sheet and ended up with broken cookies. They are very soft when you first remove them, but they firm up with time.
Your cookies will be done baking once the centre is still soft but the edges feel a bit firmer. The cookies will be a golden brown once finished. If you are able to successfully remove the cookies, the bottom will also be a golden brown or darker than the top of the cookie.

Cookie Scoop
This looks pretty similar to an ice cream scoop, and they’re awesome if you hate washing your hands 1000 times during baking. This is a mess-free way to get perfectly round and uniform cookies.
They also come in different sizes and are available pretty much anywhere that sells kitchen tools.
Silicone Baking Mats
Another great buy that you can find virtually anywhere that retails kitchen gadgets, silicone mats are ideal if you hate having to scrape your cookies off a baking sheet. Use them in place of parchment paper. They’re washable and reuseable, so they’re a great eco-friendly addition to your kitchen.
Mixer
Ok, I know a mixer is literally the essential item for baking.
I just wanted to touch on this for a second. Quality means everything. I’ve cheaped out on a mixer before, and it didn’t have enough manpower to finish the job. They’ve broken down and have done a horrible job.
If you can, invest in a high-quality one or at least a mid-grade mixer. Again, I totally understand that money can be an issue, but there are a lot of reasonably priced ones out there that still provide great results.

I know budget can be an issue for some, but if you can afford quality ingredients, I highly recommend getting them. It will upgrade your final product, and your tastebuds will thank you.
Cake Mix
I mentioned this before, but I’ll say it again just in case. I have seen larger sizes of cake mixes for sale. Check the grams, and if it’s larger than 432 g, you’ll need 1/2 cup of oil instead of just 1/3 cup.
As an added note, due to the inflation in Canada, I’ve noticed that cake mixes are smaller now. I believe the last one I bought was 375g, but don’t quote me on that. That being said, I was still able to successfully make these cookies without altering the measurements.
Vanilla Extract
Admit it. You’ve tasted a spoonful before because it smells so incredibly delicious.
When I first started baking, I always used artificial vanilla extract. I understand that the pure vanilla extract is more expensive, but it’s so worth it. It definitely adds a quality flavour to your baked goods. As an added note, I have seen large bottles for a reasonable price at Costco.

When it comes to baking, the world is your oyster. The combinations are truly endless, and because these cookies are so easy to make, coming up with different variations can be quite addicting. I’ve written out a few just to get the ball rolling.

- Use spice cake mix
- Add in 1/2 – 1 cup of raisins
Chewy Cherry Chocolate
- Use cherry chip cake mix
- Add in 1/2 cup of chopped maraschino cherries
- Mix in 1/2 – 1 cup of chocolate chips
- Bonus: You can also use a bit of the maraschino cherry juice to flavour the cookies.
Double Chocolate Chip
- Use chocolate fudge cake mix
- Mix in 1 cup of chocolate chips
Lemon
- Use lemon cake mix
- Add in 2-3 tablespoons of freshly squeezed lemon juice
Red Velvet
- Use red velvet cake mix
- Mix in 1 cup of white chocolate chips
Strawberry
- Use strawberry cake mix
- Mix in 1 cup of white chocolate chips or regular chocolate chips
