
On today’s edition of Borrowed Flavours, we will be making some Cornflake Cookies. These cookies are well-balanced, providing the perfect blend of chewy cookies and a little bit of crunch. They come together in no time and you can add other things into it, like chocolate chips or peanuts, to take them to a whole nutha level.

Let’s Dive In
I’m going to keep this post short and sweet again. I did take photos of the process, but I have no idea what happened to them. They are lost in cyberspace and I apologize.
These cornflake cookies require simple ingredients which you more than likely already have kicking around. I found this recipe on the In Bloom Bakery website. I originally saw her work on TikTok and fell in love with her creations. I’m hoping you will enjoy this recipe as much as I did.

The Process
I made some modifications from the original recipe which I will share with you. The recipe called for salted butter, but I only had unsalted, so that’s what I used. I didn’t modify the other 1/2 teaspoon of salt in the recipe, I kept that the same.
It also called for light brown sugar, but I used dark instead to give it an extra hint of a caramel flavour. The recipe also asked for egg yolks, but I was too lazy to separate them, so I just used a full egg. It still worked out.
The recipe is really straightforward and follows the bases of most cookie recipes. Whisk together dry ingredients. Cream butter and sugar in a separate bowl. Add liquids to the sugary butter. Mix everything together and then bake.
My favourite part about baking is when your entire house gets filled with the heavenly smells of sweet cookies getting toasty in the oven.
Variations for Cornflake Cookies
The cornflake cookies are awesome as is, but you can always throw something else in there for extra pizazz and flavour. Try some of these combinations. I’d recommend keeping mixins to 1/2 cup or maybe a little more. You don’t want to overwhelm the batter and have more mixins than cookie.
- Add chocolate chips (milk, semi sweet, dark, white, butterscotch etc.)
- Switch up the cereal. Use fruit rings, puffed rice, rice flakes, oat cereal, etc.
- Add in some peanuts or other nuts for a sweet and salty cookie
- Make them fruity with dried fruit such as cranberries, raisins, or even dried apricots
- Throw in some confectionary such as candy coated chocolates or marshmallows
- Have a taste of the tropics by adding in some shredded coconut
