Welcome to the first edition of Borrowed Flavours. I wanted to post this as soon as possible so you could get a good idea of what to expect when browsing this sub-section. Today, we will be making some cottage cheese pancakes. I found the recipe at Countryside Cravings.
Let’s Dive In
I’ve never had cottage cheese before this point. My mom raved about it, and she bought a tub to try. It was sitting in my fridge for a few days because I had no idea what to do with it.
Thanks to my nighttime leisure reading, I found this awesome recipe for cottage cheese pancakes. A lot of the cottage cheese pancake recipes use a blender, so I was happy to find one that didn’t require one. (Long story short, my blender is a giant POS. It couldn’t even handle blending water and soft carrots.)
The Process for Cottage Cheese Pancakes
It’s super quick and easy to mix everything together. It definitely had a different texture than your average pancake. Since I’ve never used cottage cheese before, I was kind of skeptical and worried it wouldn’t work. I made this for dinner instead of breakfast. At that point, I’m tired. I was too lazy to cut up any sort of fruit to go with it. After making the recipe, I think strawberries and peaches would complement it nicely.
I highly recommend making smaller pancakes instead of larger ones. The batter spread out a bit for me, so I had a few pancakes that ended up breaking apart because I struggled to flip them. Those obviously did not make it on the final photo. My ladle scooper thing made a silly pattern in the batter too. It almost looked like moon craters.
Also, they do take quite some time to cook. For reference, the recipe said to cook on low or medium low heat. My stove rates medium heat at a 5 and I cooked them on 4. I ended up just snacking the pancakes as the rest were cooking. Another reason why I didn’t end up cutting up any fruit. Adulting sucks, so at the end of the day, I’m just done like dinner. (haha see what I did there?)
Overall, the pancake was pretty good. I was surprised! I’m a kitchen wizard, but sometimes I have a tough time explaining flavours. They were really soft and pillow-like like which I loved.
Cottage cheese kind of tastes like mozzarella, with a hint of sweetness. Then again, the sweetness might’ve also been caused by the recipe too. I just ate them plain and they were really good. Imagine them all dressed up with fruit and other goods. Heaven. I already felt the protein kicking in after the second pancake. I ran a marathon that night. Good times.
