
On today’s edition of Borrowed Flavours, we will be making some Oat Flour Muffins with Chocolate Chips. You can use any mixins you like, but chocolate chips are a classic and go with pretty much anything. They also freeze and thaw really well if you don’t plan on eating all of the muffins in one sitting.
You’ll be seeing a lot more Borrowed Flavours posts up and coming because unfortunately, at the ripe age of Forever 21, I’ve suddenly hit a writers/cooking block. To top things off, my stovetop isn’t functioning as usual, so it’s hard to create recipes when I don’t have all the tools. But hey, other bloggers deserve some love too and I always love scouring Pinterest for new things to devour.

Let’s Dive In
I’m going to try to keep this post short and sweet. I was so focused on making muffins that I completely forgot to take photos of the process. It’s super boring to read a giant page of text, so I’ll just keep this one short.
Also, if you’re a health enthusiast, or just curious, I highly recommend the recipes on Big Man’s World. The blog is written by Arman Liew and is more focused on easy recipes that are also healthy. There’s a lot of great stuff on there!


The Process
I had some oat flour kicking around from all these kitchen experiments I was doing in the summertime. I’m also in the process of cleaning out my pantry, so I was looking for a quick recipe to get rid of the extra flour laying around.
I made some modifications to the original recipe. I didn’t have any coconut oil, so I used avocado oil instead. The original recipe also said to use chopped chocolate, and I only had chocolate chips available. I used a 3/4 cup of chocolate chips since that’s all I had. Instead of the Greek Yogurt, I used Skyr yogurt, which I’m pretty sure is the same anyways. Make sure you’re buying the plain kind, not the vanilla kind.
The recipe is really simple and all you need is one bowl! They are my favourite types of recipes because that means fewer dishes to wash. The muffins were done in 20 minutes, but it’ll vary from person to person. (Or oven to oven more like.)

Variations for Oat Flour Muffins
You can pretty much throw anything in there! I recommend keeping the mixins around 1/2 cup. Try not to exceed 1 cup or else you might end up with more mixins than muffin.
- Try different chocolate chips (white, dark, milk, etc.)
- Use dried fruit (cranberries, cherries, blueberries, strawberries, raspberries)
- Throw in some nuts for a crunch (walnuts, pecans, hazelnuts, pistachios)
- Add in some granola
- Throw in some spices such as cinnamon or pumpkin pie spice (1-2 teaspoons depending on how strong you want the flavour.)
- Mix and match some items in this list
