Cherry Chip Cake Mix Cookies

Cookies… from a cake mix! This is one of the easiest cookie recipes to make. This is great when you have minimal time and ingredients.

Ingredients
  

  • 1 box Cherry Chip cake mix
  • cup Avocado oil (any other neutral tasting oil is fine too)
  • 2 eggs
  • 1 teaspoon Vanilla extract

Instructions
 

  • In a large mixing bowl, add in all of the ingredients. Combine well with a mixer.
  • Scoop out some batter using a tablespoon, roll into a ball, and place on a cookie sheet. You can also use a cookie scoop for this step.
  • Leave about 1-2 inches of space in between each cookie ball.
  • Bake at 350°F for 10 minutes, or until the cookies are a golden brown. The amount of time will also depend on the size of the cookies.
  • Let the cookies rest for 5 minutes before removing them from the cookie sheet.

Notes

I know there are different cake mix boxes out there. If you have one that’s bigger than 432g, you’ll need to use 1/2 cup of oil instead of just 1/3 cup.
There are a lot of different variations. You can mix and match cake mixes and add ingredients. The basic recipe is 1 cake mix, 1/3 cup oil, 2 eggs, and 1 teaspoon vanilla. Everything else is up to you. For add-ins, I usually keep it to 1 cup.
How long it takes to bake will depend on the size of your cookies. I used a giant cookie scoop, so I needed the full 15 minutes. Just bake until the edges start to harden and the cookies are a golden brown.
Also, wait to remove them from the cookie sheet after they’re done baking. They might be a bit squishy and fragile, but they harden within a few minutes.
