Pasta with Lemon Garlic Butter
This recipe is perfect for a springtime lunch or dinner. It requires minimal ingredients and comes together in no time.

- 2 cups dry pasta (shorter varieties work best like penne, macaroni, fusilli, and cavatappi)
- 1 bunch asparagus
- 3-4 teaspoons butter
- 3-4 cloves garlic
- 1 lemon
- salt and pepper (to taste)
Bring a large pot of salted water to a boil. Add pasta and cook until al dente or preferred tenderness. Before draining the pasta, take out 1/4 to 1/2 cup of pasta water.
While the pasta is cooking, cook the asparagus. You have a few options here. You can roast it, boil it, grill it, or steam it.* Take the asparagus off the heat once it's finished cooking. Try to make sure you undercook it so it doesn't get overcooked during the next step.
In a large skillet, add the asparagus, butter, garlic, salt, pepper, and any other seasonings you're adding. Cook on medium heat for about 2 minutes.
Add the pasta into the skillet with the asparagus and stir until everything is well combined. Add the lemon juice and serve warm. You can also top the pasta with parmesan cheese.
*Steaming it will keep its vibrant colour. I think it tastes great roasted, but it's up to you.
To make this a complete meal, you can add chicken or tofu. I also recommend experimenting with different veggies, especially greenery. Broccoli, green beans, peas, zucchini, and spinach would go well with this.
