Quick and Easy Pasta Primavera

A delicious pasta dish that uses minimal ingredients and is rich in veggies. Pasta primavera is very versatile and can be customized to your personal taste.

Ingredients
  

  • 2 tbsp olive oil or avocado oil
  • 1 small onion
  • 1 zucchini
  • 1 cup cherry tomatoes, halved
  • 3 cloves of garlic
  • salt, to taste
  • pepper, to taste
  • 1 tsp. Italian seasoning
  • 2 cups dry pasta (penne or fusilli)
  • ¼ cup pasta water *See notes

Instructions
 

  • In a large pot, bring salted water to a boil. Add pasta of choice and cook until preferred consistency. Remove ¼ of the pasta water, drain the pasta, and set it aside.
  • While the pasta is cooking, heat a large skillet on medium heat. Add the oil and onions to the skillet and cook for approximately 5 minutes, or until the onion starts to become more transparent.
  • Add the zucchini to the skillet, stir, and let it cook for about 3–5 minutes. Stir occasionally.
  • Add the cherry tomatoes to the skillet, stir, and let it cook for 10-15 minutes. Stir occasionally. Squish the tomatoes in the skillet so some of the juice comes out. This will add more flavour. Add in the garlic for the last 5 minutes of the cook time.
  • After the tomatoes have cooked for a while, add salt and pepper to taste, as well as the Italian seasoning. Mix well, and then add the pasta water. Start off with a small amount and then keep adding pasta water until the desired consistency is reached.
  • Add the cooked pasta to the skillet and mix well until the noodles are coated and the veggies are mixed in well. Serve and enjoy!

Notes

Pasta Water: Right before you're about to drain your pasta, take a liquid measuring cup (preferably a glass measuring cup) and remove some of the pasta water from the pot.
This dish is extremely versatile. If you're looking for some added protein, you can add chicken or tofu.
There are also lots of different ways to make pasta primavera. This recipe is a very basic version of the dish which requires minimal ingredients.
You can also mix and match veggies to your heart's content. The more colour, the better.
For a gluten free option, you can use gluten free noodles in place of regular noodles.
